“ I must first apologize for the delay in writing my review of a restaurant we will re-visit for the fourth time on October 13th -- it is clearly one of our favorite restaurants! Thank you to Marco, Clement, Francesco and the entire Le George staff for always welcoming us so warmly and taking such good care of us! Just based on them, the restaurant merits is Michelin star. The food! I am passionate about oysters. If you are too, Le George is a must as they serve oysters from Marseillan raised by Florent Tarbouriech in the Etang de Thau (yes, the family deserves a special shout-out the oysters are impossibly amazing that there are no words to adequately describe them!) They come four to an order -- I have at least three orders, often four! You can't find them anywhere else in Paris that I know of. I've had everyone of the crudos on the menu, the Yellowtail Kingfish with the Chiodini mushrooms and garlic vinaigrette pack a delicate but savory punch as does the tuna crudo in strawberry and verjuice. My husband and I always request a double order of the beef tenderloin carpaccio, which is sliced thinly with just the right amount of black truffle to give it that earthy taste but not distracting from the quality of the meat itself. Given it is an Italian restaurant, one must of course have at least an order of pasta. We've had the Carbonara and the veal agnolotti and both were spot on. While I always go for multiple crudos (if not all of them, some as starters and some as mains) my husband always orders the wood-fired beef tagliata, which requires a slight nudging to get him to share a bite with me! The ambience is always such a treat, a respite from the hustle and bustle outside, the floral arrangements always impeccably presented and the service is so wonderfully attentive without ever being intrusive. I speak French fluently, my husband does not -- they always make sure to explain and describe everything in English for him. This is why when I read some negative reviews I was not only surprised but quite disturbed as we have been there so many times and everything has been five-star quality and consistent. Perhaps those reviewers had a terrible day, or just enjoy complaining about everything. Quite sad. Thank you team Le George and see you on the 13th ... again! ”
